Hi everyone! This coming week is going to be filled with networking and looking for internships with the Viterbi Industry Networking Event (VINE), the Viterbi Career Expo, and the SWE Fall Evening with Industry! I took a break this morning from applying to internships to celebrate that it’s October by making my absolute favorite breakfast, pumpkin pancakes!

While I usually eat these just about every time of year, I waited to make them this year until it was finally October. Although it doesn’t feel quite like fall yet at USC – It’s been about 90 degrees this weekend! I don’t cook much in my apartment and choose to eat most of my meals at my sorority house instead, so it’s usually a special occasion when I decide to cook for myself.
My favorite pumpkin pancake recipe is just a normal pancake recipe, with some pumpkin, cinnamon and pumpkin spice added to it. I had experimented with other specific pumpkin pancake recipes, but nothing tasted quite as good to me as the pancake recipe I had grown up with, with some pumpkin added to spice it up.
Here’s my recipe (makes about 6 pancakes):
- 1 cup flour
- 1 T sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg
- 1 cup milk
- 2 T cooking oil
- 1/3 cup pumpkin
- dash of pumpkin spice
- dash of cinnamon
Just mix everything together, pour the batter in the pan, and enjoy! I usually like to top my pumpkin pancakes with whipped cream 🙂
